Fresh Lime Vinaigrette

INGREDIENTS

1/4 c Balsamic or white wine vinegar
2 tb Olive oil
2 tb Fresh lime juice
2 ts Chopped green onions
1 ts Sugar
1 ts Chopped parsley
1/2 ts Stone-ground mustard; if desired
Salt and pepper to taste

INSTRUCTIONS

Makes 1/2 cup.
Vinaigrette is a classic marinade to use with cooked or raw winter
vegetables. Try this one over chopped red and green cabbage, leaf lettuce,
and sliced red onions.
Combine vinegar, olive oil, lime juice, onions, sugar, parsley, mustard,
salt and pepper in a shaker jar; mix well.
