Garlic Roasted Halibut

INGREDIENTS

20 Red new potaotes (cut in
Half)
12 Unpeeled garlic cloves
1 md Red pepper cut in 1" pieces
1 md Green pepper cut in 1"
Pieces
1 md Red onion peeled & cut in
Wedges
Salt & pepper
GARLIC ROSEMARY BUTTER
4 Halibut steaks
Lemon wedges

INSTRUCTIONS

Place vegetables on a baking sheet & season with salt & pepper.
Drizzle with half of the garlic butter & toss to coat well. Bake on
upper shelf of preheated 450 oven for 20 minutes or until vegetables
start to brown. Stir with a spatula & move baking sheet to bottom
shelf of oven. Meanwhile, season fish with salt & pepper & brush with
remaining garlic butter. Place on baking sheet or broiling pan & sit
on the upper shelf of oven. Bake for 10 minutes per inch of
thickness, measured at the thickest part of the steaks, or until fish
flakes when tested with fork. Remove fish & vegetables from oven.
serve with lemon wedges.
