German Pancake

INGREDIENTS

3 Eggs or
4 Eggs
3/4 c Milk or
1 c Milk
3/4 c Flour or
1 c Flour
3 tb Butter or
1/4 c Butter

INSTRUCTIONS

Stick a large frying pan (about 3 inches deep) in the oven while it
preheats to 425 F.  Meanwhile, whir the eggs in a blender for a minute.
While the blender is running, pour in the milk, then slowly add the flour.
Blend for another minute or until the batter is smooth. When the oven is
hot, take out the pan and melt the butter in it. Pour in the batter. Cook
for 20-25 minutes, until puffy an d browned on the top edges. Serve with
syrup or apple pie filling.
This is adapted from one of the various Sunset cookbooks. The 3 egg version
is usually plenty for 2 people.  The 4 egg version will generally feed two
adults and 2 small children, usually with leftovers.
