INSTRUCTIONS
Peel, core, and roughly chop apples. Place in a food processor, and
add crystallised ginger. Blend until ginger is coarsely chopped. Add
to loaf ingredients and mix together thoroughly. Pour into two well
buttered 18cm x 8 cm (7 1/2 x 3 inches) loaf pans. Bake in a
moderately hot oven at 190ø C for approx 40 minutes or until a skewer
when inserted comes out clean. Turn onto a wire rack and cool. Spread
over yoghurt icing and decorate with extra sliced crystallized ginger.
Yoghurt Icing: Mix together 1 cup icing sugar and 2 tablespoons
