INGREDIENTS

1/4 c Chopped shallots
1/2 c Dry white wine
1/2 c White wine vinegar
1 tb Grated fresh ginger
1 Stick Butter; chilled, and
Cut into 8 pieces
Salt; to taste
Freshly-ground black pepper; to taste

INSTRUCTIONS

In a saucepan combine shallots, wine, vinegar and ginger and bring to a
boil. Reduce heat and simmer until liquid is reduced to a syrup. Swirl
chilled butter into syrup one piece at a time. Adjust seasoning with salt
and pepper. Serve immediately. This recipe yields 1/2 cup.
