Glazed Meatloaf

INGREDIENTS

1 1/2 lb Extra lean ground beef or ground turkey
1 c Fine dry bread crumbs
1/2 c Chopped red pepper
1/2 c Shredded carrot
1/4 c Minced scallions
1/2 c EGG BEATERS ® Healthy Real Egg Substitute
1/2 c Ketchup
1 Clove garlic; minced
1 ts Dried basil or thyme leaves
Glaze; recipe follows

INSTRUCTIONS

In large bowl, thoroughly combine ground beef or turkey, bread crumbs,
pepper, carrot, scallions, EGG BEATERS, ketchup, garlic and seasoning.
Shape mixture into 9 x 4-inch loaf. Place in greased 13 x 9 x 2-inch baking
pan. Bake at 350 degrees F for 30 minutes. Spread loaf completely with
Glaze; bake for 35 to 45 minutes more or until internal temperature reaches
165    degrees F.
Glaze: Combine 3 tablespoons ketchup, 1 tablespoon brown sugar and 1 table-
spoon Dijon mustard until smooth
