Golden Yellow Cornbread

INGREDIENTS

1 c INDIAN HEAD Yellow Corn Meal (any good quality yellow corn meal is OK)
1 c Sifted flour
1/4 c Sugar
3 ts Baking powder
1 ts Salt
1/4 c Coft shortening
1 c Milk
1 Egg; beaten

INSTRUCTIONS

Preheat oven to 425*F
Combine corn meal, flour, sugar, baking powder and salt in a bowl. Cut in
shortening. Mix egg and milk together and add to dry ingredients with a few
swift strokes. Bake in a greased 9x9x2 inch pan for 20 to 25 minutes.
*instead of the 9x9x2 pan we use a generously greased cast-iron skillet.
also we add finely chopped green pepper and onion to ours.
