Gorgonzola-Dressed Greens

INGREDIENTS

1/4 c Red wine vinegar
2 Shallots; chopped
3 Cloves garlic; chopped
2 tb Dijon-style mustard
4 oz Gorgonzola cheese
3/4 c Olive oil
Salt and black pepper to taste
1 Head red leaf lettuce
1/2 lb Mesclun; (mixed greens)
1 bn Radishes; sliced
2 Tomatoes; cut into wedges
1 sm Cucumber; thinly sliced
2 oz Gorgonzola cheese; to crumble on top

INSTRUCTIONS

GORGONZOLA DRESSING
GREENS
For the dressing, place vinegar, shallots, garlic, mustard, and Gorgonzola
in a food processor and puree until smooth. With the motor running, slowly
add the oil; process until smooth. Season with salt and pepper. Refrigerate
until ready to use.
To assemble, clean lettuce and mesclun and place in a large bowl. Add
radishes, tomato, and cucumber and toss. Add about 1/2 cup dressing and
toss to coat the greens. Crumble Gorgonzola on top and serve.
Serves six.
