Granary Thyme Scones

INGREDIENTS

125 g Self-raising flour; (4oz)
1 ts Baking powder
A pinch of salt
125 g Granary-type flour; (4oz)
50 g Butter; plus extra for
; greasing (2oz)
2 ts Chopped thyme or 1 teaspoon dried thyme
2 tb Milk
1 Egg; beaten

INSTRUCTIONS

1. Preheat the oven to Gas Mark 7/220 C/425 F.
2. Sift the self-raising flour with the baking powder and salt. Mix in the
granary-type flour.
3. Rub the butter into the flours and stir in the thyme. Add the milk and
egg to make a soft dough.
4. Roll out to 1cm (1/2 inch) thick and cut into rounds. Place on a well
greased baking tray and bake in the preheated oven for 10 minutes.
5. Cool a little and serve warm, heaped in a basket with sprigs of
flowering thyme if you like.
