Grandma’s Chicken Soup

INGREDIENTS

4 c Chicken broth, homemade or canned
1 lb Chicken parts, -or-
1 c Diced cooked chicken
2 Garlic cloves, peeled and pressed
1 lg Onion, coarsely chopped
2 Celery stalks with leaves, diced
1 pk (10 ounces) frozen peas and carrots
1 Bay leaf
Salt and pepper to taste
1/4 c Chopped fresh dill

INSTRUCTIONS

I checked this great little book out of the library a couple days ago. It's
called Simple Soups by Teresa Kennedy. Here are a few examples of her great
sounding recipes!
Place all of the ingred together in a lg saucepan. Cover and simmer over
med heat for 20 minutes (add 10 to 15 minutes if using uncooked chicken),
or until the vegies are tender. If using uncooked chicken, remove the
chicken from the saucepan and allow to cool slightly. Discard the skin and
boned, dice the remaining meat, and return to the soup. Heat thoroughly
before serving. Serves 6
