Grandmother’s Brisket

INGREDIENTS

Olive oil
4 lb Beef brisket
6 lg Onions; roughly chopped
3 Stalks celery; roughly chopped
Salt; pepper and paprika
Potatoes; cut into chunks

INSTRUCTIONS

Heat the oil until quite hot but not smoking. Sear the brisket on all
sides. Add half of the onions and celery to pan, stir and sprinkle with
salt, pepper and paprika (to taste). Add remaining celery and onions,
sprinkle with salt, pepper and paprika. Cover pot, turn heat to medium-low
and simmer 3-4 hours. Stir occasionally, making sure that onions aren't
burning and sticking to the bottom of the pan. Add potatoes the last 30
minutes of cooking time.
NOTES : Can be baked in the oven for 3-4 hours at 325F.
