INGREDIENTS

1/2 lb Dates; cut into 1/2" thick cubes
3/4 c Water
1 tb Honey
1 c Toasted walnut pieces
3/4 c Brown sugar
1 c Unsalted butter
2 1/2 c Rolled oats
2 c Flour
1 ts Baking soda
1 ts Vanilla extract
2 tb Milk

INSTRUCTIONS

Preheat oven to 350 degrees. In a 1-quart saucepan, combine dates, the
water, and honey. Bring to a boil, reduce the heat, and simmer for 7
minutes. Cool for 10 minutes. Stir in walnuts. Reserve. In a large mixing
bowl, crumble together brown sugar, butter, rolled oats, flour, and baking
soda. In a small bowl, mix vanilla and milk, then stir into dry ingredients
to form a crumbly mixture. Pat two thirds of the crumbly mixture onto the
bottom of an 8-inch-square baking pan. Spread date mixture onto crumbs.
Sprinkle remaining crumbly mixture on top. Bake until lightly browned (35
to 40 minutes).
NOTES : Yield: 16 squares.
