Greek Honey-lemon Pork Chops

INGREDIENTS

2 T Honey
Finely grated zest – 1 lemon
2 T Lemon juice
1 T Olive oil
1 T Chopped fresh mint OR
1/2 t Dried leaf mint crushed
1/2 t Salt
1/4 t Ground hot red pepper
4 Rib pork chops, about 1 3/4
lbs 3/4-inch thick

INSTRUCTIONS

Prep: 15 minutes  Refrigerate: 4 hours  Grill or Broil: 10 to 12
minutes Cost: $ 1.67 per serving.  Whisk together hones, lemon zest and
juice, olive oil, mint, salt and  pepper in small glass measuring cup.
Place chops in glass baking  dish. Pour marinade over; turn to coat.
Cover; refrigerate at least 4  hour or overnight, turning occasionally.
Grill or broil 4 inches from  heat 5 to 6 minutes per side or until
cooked through. Serve with  summer squash.  Nutrient Value per serving:
341 calories, 44 g protein, 13 g fat, 9 g  carbohydrate, 398 mg sodium,
125 mg cholesterol.  Exchanges: 6 meat, 1/2 fruit, 2/3 fat.  Family
