Greek Salad Burgers

INGREDIENTS

Greek salad
1 c Seeded and diced vine
Ripened tomatoes
2 tb Chopped red onion
6 Kalamata olives — pitted
And chopped
2 ts Extra virgin olive oil
1/2 ts Oregano
Salt and freshly ground
Pepper — to taste
Burgers
1 1/2 lb Ground lamb
1/3 c Crumbled feta cheese
1 lg Clove garlic — minced
1/2 ts Salt
1/4 ts Freshly ground black pepper
Vegetable oil — for
Brushing grill
4 Pita breads — split to form
Pocket

INSTRUCTIONS

Prepare barbecue for medium-high heat. In small bowl, combine all Greek
salad ingredients; toss well and set aside. In large bowl, combine burger
ingredients; form into 4 patties about 3/4-inch thick. Brush grill rack
with oil. Grill burgers, covered, 4-5 minutes per side or until desired
doneness. Transfer burgers to pita pockets. Spoon Greek Salad on top of
burgers. Serves 4
