Irish Potatoes, Side dishes 4 Servings

INGREDIENTS

3 md Potatoes, washed and peeled
1 lg Onion, finely sliced
2 tb Chopped bacon
3/4 c Grated Irish or white cheddar
Salt & pepper to taste

INSTRUCTIONS

Slice peeled potatoes paper thin and pat dry with paper towels. Fry the
bacon in a heavy skillet. Remove the bacon and 1 tablespoon of bacon fat.
Add to the skillet the potatoes, onion, bacon and cheese in alternate
layers, ending with potatoes. Dot top with remaining bacon fat.  Cook over
medium heat until potatoes are tender and bottom is crisp. Slide the
Haggerty out onto a plate.  Return to pan, top side down. Continue cookie
until browned. Cut into wedges and serve hot.
