Halibut With Dried-pineapple Salsa

INGREDIENTS

1/2 c Diced dried pineapple
1/2 c Diced red bell pepper
1/4 c Chopped fresh cilantro
2 t Minced jalapeno pepper
1/8 t Salt
1/4 c Fresh lime juice
1 t Vegetable oil
4 Halibut steaks, 4-ounce
1 inch thick
1 t Vegetable oil
1/8 t Salt
Vegetable cooking spray
Lime wedges, optional

INSTRUCTIONS

Combine first 7 ingredients in a bowl, and stir well. Let stand at
least 15 minutes, stirring occasionally.  Brush fish with 1 teaspoon
oil, and sprinkle with 1/8 teaspoon salt.  Set aside.  Prepare grill.
Place fish on grill rack coated with cooking spray, and cook 5  minutes
on each side or until fish flakes easily with a fork. Yield:  4
servings (serving size: 3 ounces fish and 1/4 cup salsa). NOTES :
Serve fish with pineapple salsa and lime wedges, if desired. Recipe
