Ham Fried Rice In Broth

INGREDIENTS

2 Smoked ham
1/2 c Bamboo shoots
3 Eggs
4 c Cold cooked rice
2 T Oil
4 c Stock
1/2 t Salt

INSTRUCTIONS

Mince smoked ham. Slice bamboo shoots. Beat eggs. Break up and
separate the cold cooked rice as in step 1 of "Simple Fried Rice".
Heat oil. Add eggs, but do not stir. When eggs begin to set, add rice
and stir-fry to heat through. Add stock and half the minced ham.  Bring
to a boil, stirring; then turn off heat. Transfer rice and  broth to a
serving bowl. Garnish with sliced bamboo shoots and  remaining minced
