Ham ‘n’ Cheddar Cups

INGREDIENTS

2 c All-purpose flour
1/4 c Sugar
2 ts Baking powder
1 ts Salt
1/4 ts Pepper
6 Eggs
1 c Milk
1/2 lb Fully cooked ham; cubed
1/2 lb Cheddar cheese; diced or shredded
1/2 lb Sliced bacon; cooked and crumbled
1 sm Onion; finely chopped

INSTRUCTIONS

In bowl, combine the flour, sugar, baking powder, salt and pepper. Beat
eggs and milk; stir into dry ingredients until well mixed. Stir in ham,
cheese, bacon and onion. Fill well-greased muffin cups three-fourths full.
Bake at 350° for 45 minutes or until a toothpick inserted in cener comes
out clean. Cool for 10 minutes before removing to a wire rack.
