Herb-crusted Flank Steak

INGREDIENTS

2 T Dijon mustard
1/2 t Minced garlic
1/4 t Freshly ground pepper
1/8 t Tarragon
1 lb Flank steak, trimmed of fat
1/3 c Fresh bread crumbs
1 T Chopped fresh parsley
Broccoli rabe, okra or
broccoli optional

INSTRUCTIONS

Combine mustard, garlic, pepper and  tarragon in bowl. Spread half the
mixture on one side of steak. Broil  steak, mustard side up, 4 inches
from heat source, 4 minutes. Turn  meat over, spread with remaining
mixture; broil 3 minutes more for  medium-rare. Combine bread crumbs
and parsley; pat evenly on meat.  Broil 1 minute more. Let stand 5
minutes. Slice steak thin,  diagonally across the grain. Serve with
sautéed broccoli rabe, okra  or broccoli, if desired. This simple yet
savory steak dish can be on  the table in a flash--a great weeknight
fix.  Prep time: 10 minutes plus standing Cooking time: 8 minutes
