Herb Fruit Salad with Mint Sorbet

INGREDIENTS

2 Oranges; peeled and sliced
1 Grapefruit; peeled and divided
; into segments
1 lg Pear; peeled, cored and
; sliced
250 g Seedless grapes or 250g; (8oz) strawberries,
; if available (8oz)
300 ml Fresh orange juice; (1/2 pint)
1 tb Chopped thyme
1 tb Chopped lemon balm
1 ts Chopped mint
Fresh mint leaves
4 Scoops mint sorbet

INSTRUCTIONS

TO DECORATE
1. Mix all the fruit together and pour the juice over it.
2. Stir in the chopped herbs and chill for several hours before serving.
3. Serve each helping with a scoop of mint sorbet in the middle, and some
cream if you like, and decorate the dessert with a few mint leaves.

NOTES : It seldom occurs to people to mix herbs with fruit salad, but they
improve it enormously; even the smallest touch can make a transformation.
This fruit salad is served with a mint sorbet that tastes refreshingly
clean on the palate.
