Herb Marinade and Baste for Turkey

INGREDIENTS

1 ts Paprika
1 1/2 ts Dried tarragon
1 ts Dried rosemary
1/2 ts Hot pepper sauce
2 ts Salt
2/3 c Lemon juice or vinegar
1/4 c Water
1 tb Sugar
1 tb Onion; finely chopped
2/3 c Vegetable oil

INSTRUCTIONS

Combine all ingredients and blend thoroughly. (For variety, remove tarragon
and sugar and substitute 1 tsp. each of thyme and marjoram and 1/2 tsp.
oregano. Yield: 1 3/4 cup
Savory Chinese Turkey Meat Marinade
1/2 cup soy sauce 1/4 cup water 3 Tablespoons oil 3 gloves garlic, crushed
1/2 tsp. black pepper 2 teaspoons salt 2 teaspoons sugar 1 teaspoon
cinnamon 1/4 - 1/2 teaspoon ground cloves 1 tsp. ground ginger (or anise)
Mix all ingredients together well and evenly coast surfaces of turkey parts
or meats. Marinate at least 4 hours. Yield: 1 cup
Marinade for Turkey Breast Cuts and Kabobs
1/3 cup chili sauce 2 Tbsp. lemon juice 1 Tbsp. sugar 2 bay leaves, broken
up
Combine all ingredients and spread evenly over white turkey meat cuts.
Marinate at least 4 hours. Yield: 1/2 cup
Lemon Barbecue Marinade
1/2 cup lemon juice 1/4 cup vegetable oil 1/2 tsp. salt 1 clove garlic,
mashed 1/2 tsp. black pepper 1/2 tsp. thyme leaves 1 tsp. Worcestershire
sauce 2 Tbsp. onion, finely chopped
Mix all ingredients and let set for 2 hours to allow flavors to blend,
BEFORE adding meat. Yield: 3/4 cup
