INGREDIENTS

2 c Couscous
2 c Water
1 tb Butter
Salt; to taste
Freshly-ground black pepper; to taste
1/2 bn Scallions; finely sliced
1/4 c Finely-diced Spanish onion
1 tb Rice wine vinegar -; (to 2 tbspns)

INSTRUCTIONS

Bring water, 1 tablespoon salt, and butter to a boil. Add couscous, remove
from heat and stir quickly and thoroughly. Cover for 5 minutes. Moisture
will be absorbed. Fluff with a fork. Add scallions, Spanish onion and rice
wine vinegar. This recipe yields 4 servings.
