Highland Oat Squares

INGREDIENTS

2 oz Vegetable margarine
1 Finely chopped onion
4 oz Mushrooms; chopped (optional)
5 oz Rolled oats
6 oz Finely grated carrot
5 oz Vegetarian cheese; grated
1 Free range egg; beaten
1 Clove garlic; crushed (optional)
1 tb Soya sauce
1 tb Tomato sauce or pur.e
1 ts Basil
Salt and black pepper to taste

INSTRUCTIONS

1. Preheat oven to 170°C/325°F/gas mark 3.
2. Melt the margarine in a pan. Gently cook the onion and mushrooms for 5
minutes. Transfer them to a mixing bowl and add all the other ingredients.
3. Season to taste with salt and pepper and mix well. Press mixture into a
greased, shallow baking tin and bake for 25-30 minutes.
4. Cut into 20 small squares and serve.
