INGREDIENTS

1 Jar or bottle larger than 32-oz with a lid that can be tightly sealed
1 lg Piece of ginger root (at least 1 oz); peeled & crushed
1/3 c Lime juice
3 sm Limes; peel of -or-
1 Lemon; peel of
1/2 c Sugar
3 3/4 c Boiling water
1/4 ts Yeast
1/4 c Lukewarm water

INSTRUCTIONS

To make 1 quart(US): Combine the crushed ginger,lime peel,juice and sugar
in the jar.  Pour in the boiling water. Cover loosely and let cool to room
temp.  Dissolve the yeast in the lukewarm water and add.
Seal the jar as tightly as possible and let stand at room temp overnight.
Chill, strain and serve.
