Honey And Lemon Pancakes With Baked Fruit

INGREDIENTS

200 g Self raising flour, 7oz
25 g Castor sugar, 1oz
300 Milk, 1/2 pint
1 Size egg
2 T Honey
1 T Lemon zest
8 Plums or 4 bananas, cut into
thick
pieces
25 g Dark brown sugar, 1oz
Oil for greasing

INSTRUCTIONS

Sieve the flour and castor sugar into a bowl.  Mix the milk, egg and
honey together in a separate bowl and pour it  onto the flour whisking
to form a smooth batter. Pass the mixture  through a sieve into a jug.
Then add the lemon zest.  Cut the plums in half, remove stones and
place on a roasting tray.  Sprinkle over the brown sugar and grill for
approximately 5-8 minutes  until the sugar caramelises. If baking the
fruit place the fruit into  a pre-heated oven 190 C 375 F, Gas Mark 5
for 10 minutes.  Heat 1 teaspoon of oil in a heavy based frying pan
over a moderate  heat.  Pour a small amount of the mixture into the
middle of the pan and  tilt the frying pan to allow the mixture to
spread to the edges.  Cook the pancake for 1 minute on each side.
Repeat this using the  remaining mixture.  Slide the pancake onto a
plate, place 2 pieces of fruit and some ice  cream on 1 half of the
pancake and fold over. Fill the remaining  pancakes with a mixture of
the fruit and ice cream.  Notes Alternatively canned fruit or fruit pie
filling could be used  instead of the plums.  Converted by MC_Buster.
