Honey Crunch Nut Bars

INGREDIENTS

1/3 c Butter or margarine
1/3 c Honey
1 c Light-brown sugar, packed
1/2 ts Cinnamon
1 ts Vanilla
2 cn (5 oz ea.) chow mein noodles
1 cn (6.5 oz) mixed nuts* (see note at bottom)

INSTRUCTIONS

I tried them this weekend, and they are NOT to be believed! Sort of half
candy, half cookie. In fact, if you're anything like me, DON'T make them or
you'll end up eating too much! :) I have a friend who is the kind of cook
that you actually have to show which side of a pan the handle is on...and
SHE wanted the recipe!!!! I got in on the Prodigy BB a while back, and it's
the 1994 Grand Prize Winner in the La Choy recipe contest, published in
Women's Day.
Plus, there's no baking, just a little cooking in one pot on the
stove...and they're EASY!
Grease a 9 inch square pan. Put butter, honey, brown sugar and cinnamon
into a 3 qt. saucepan. Stirring constantly, bring to a boil over medium
heat, then boil 1 minute. Remove from heat, stir in vanilla. Add noodles
and stir gently until coated. Stir in nuts. Scrape mixture into prepared
pan and pat down flat and level with wax paper. Let stand at least 1 hour,
or until completely cooled. Cut bars with a large heavy knfe.
note: The recipe did not specify salted or unsalted. I used the salted
figuring it probably was needed to offset some of the sweetness...this was
NOT a mistake, and they were perfect the way they were. So use the salted!
