Honey-glazed Melon Chicken

INGREDIENTS

3/4 lb Skinless, boneless chicken
thinly sliced
1 T Cooking oil
1 t Minced ginger
1 c Cantaloupe and honeydew
melon balls
1 T Honey
2 t Lemon juice
1 ds Sesame oil
1 T Dry sherry
1 t Cornstarch
1/4 t Salt

INSTRUCTIONS

Combine chicken and marinade ingredients in a medium bowl; stir to
coat. Set aside for 30 minutes. Heat a wok over high heat until hot.
Add cooking oil, swirling to coat sides. Add chicken and ginger; stir
fry for 2 minutes or until chicken turns opaque. Add melon balls,
honey and lemon juice, cook until heated through. Stir in sesame oil.
