Honey Raisin Muffins

INGREDIENTS

1 1/4 c All-purpose flour
1 tb Baking powder
1/4 ts Salt
2 c Raisin Bran cereal
1 c Milk
1/4 c Honey
1 Egg; lightly beaten
3 tb Vegetable oil

INSTRUCTIONS

Combine flour baking powder and salt; set aside. In a large bowl, combine
cereal, milk and honey; let stand until softened, about 2 minutes. Stir in
egg and oil; mix well. Add dry ingredients; stir just until moistened. Fill
greased or paper-lined muffin cups 2/3 full. Bake at 400 F. for 18-20
minutes or until muffins test done. Cook in pan for 10 minutes before
removing to a wire rack. Yield: 10 muffins. Submitted by Joyce Reece, Mena,
