INGREDIENTS

1 Piece fresh ginger root; 3-4 inches peeled and grated
5 qt Water
2/3 c Maple syrup
4 Mint sprigs

INSTRUCTIONS

Makes 20 cups.
Combine ingredients in a large pot and bring to a boil. Simmer for 15
minutes, then remove from heat. When cooled, taste, and more water or syrup
if desired. Remove mint and refrigerate. Serve in tall glasses over cracked
ice, garnished with additional mint.
