INGREDIENTS

2 lb Fresh spinach; cooked, drained and chopped
2 tb Lemon juice
1/2 c Onion; chopped
2 Cloves garlic; minced and saut.ed with onion in a small amount of olive oil
1/2 c Grated Parmesan or cheddar cheese
6 Eggs

INSTRUCTIONS

Prep: 10 min, Cook: 15 min. Preheat oven to 350°F. Season the spinach with
the lemon juice. Combine with saut.ed onion and garlic, and transfer to
oiled individual ramekins. Sprinkle cheese over the spinach mixture and,
using the back of a spoon, make a 1 inch deep well in each. Crack and drop
one raw egg into each well and bake until the eggs are set, about 8
