Italian Bean Soup

INGREDIENTS

2 c Chicken broth
1 Rib celery
1 cn Lima beans
1 cn White beans
1 tb Olive oil
2 ts Dried basil
1 Onion
1 lg Can whole tomatoes
Salt and black pepper
1/2 c Parmesan cheese

INSTRUCTIONS

Bring broth to simmer over medium heat. Add celery, lima and white beans to
broth. In saute pan heat oil and cook onion 3 minutes until soft. Stir in
basil. Add onion mixture to bean mixture. Stir in tomatoes. Simmer 5
minutes. Season to taste with salt and pepper. In food processor, puree
soup until coarse. Stir in cheese. Serve hot.
Approximately 10-12 minutes.
Per serving: 1754 Calories; 35g Fat (17% calories from fat); 108g Protein;
262g Carbohydrate; 37mg Cholesterol; 3988mg Sodium
