Italian Pita Squares

INGREDIENTS

1 pk 6 white pitta breads
2 lg Beef tomatoes
2 150 g packs mozzarella cheese
Salt and freshly ground black pepper
2 tb Olive oil
1 sm Spri fresh basil; to garnish

INSTRUCTIONS

Toast one side of the pitta bread under a preheated moderate grill for 1
minute.
Trim the rounded ends and cut each pitta bread into 8 small squares.
Thinly slice the tomatoes and cut each slice into quarters. Slice each
round of cheese into 12 then each slice into half.
Lay a slice of tomato and cheese on the untoasted side of each pitta bread
square.
Serve cold or place under a preheated moderate grill until golden brown and
bubbling.
Sprinkle with salt and freshly ground black pepper. Drizzle each pitta
square with olive oil and garnish with a sprig of basil.
