James Barber’s Pepper Pitas And Hummus

INGREDIENTS

14 oz Chickpeas, canned drained
rinsed
3 Cloves garlic, minced
4 T Peanut butter
Juice of 1 lemon
6 T Yogurt
Pepper Pitas-
8 Pita bread
4 T Olive oil
1 pn Salt
2 T Pepper
2 T Parsley

INSTRUCTIONS

Combine all of the ingredients in a food processor and blend until
smooth. If too thick add a little water, lemon juice or yogurt. Makes
2 cups  Pepper Pitas: Preheat oven to 400 degrees. Cut pitas into
quarters.  Brush with the oil and sprinkle with salt, pepper and
parsley. Bake  until crisp, about 5 mins. Makes 32 pitas  Source James
