Jo’s Plain Old Pot Roast

INGREDIENTS

Potatoes
Carrots
1 Onion
1 Envelope Lipton onion soup mix
1 cn Campbell's golden mushroom soup
4 lb (about) beef chuck roast

INSTRUCTIONS

Peel carrots and cut into 2-3 inch pieces.  Place in bottom of crockpot.
Peel potatoes, cut in half if large otherwise leave whole.  Place on top of
carrots.  Sprinkle meat with onion soup mix and place on top of other
ingredients in crockpot.  Quarter onion and stuff alongside meat.  Top with
golden mushroom soup.  Cook on high till done, 5-6 hours (until you can
pull the meat apart easily with two forks).
(I generally just cut carrots and potatoes until it looks "right" to me, so
I don't know exactly what quantity to give--I tend to over-do, cuz they're
great as leftovers.  :-) )
