Judith’s Strange Upside-down Rhubarb Cake-like Thing

INGREDIENTS

3 c Rhubarb, cut into 1 inch
pieces
1 c Sugar
1 t Or more cinnamon
Grated rind and juice of 1
lemon
1 T Flour
3 T Melted butter
1 c Flour
1/2 c Sugar
1 t Baking powder
1/4 t Salt
1 T Melted butter
1/2 c Milk

INSTRUCTIONS

Preheat oven to 425 degrees Prepare the following batter:  thoroughly
grease 8" casserole dish Beat the batter and pour it over  rhubarb in
pan. Cover. Bake 30 minutes. Reverse onto plate.  Enjoy! from Judith
