Judith’s Strange Upside-Down Rhubarb Cake-Like Thing

Dairy Rhubarb 1 Servings

INGREDIENTS

3 c Rhubarb; (cut into 1 inch pieces)
1 c Sugar
1 ts Or more cinnamon
Grated rind and juice of 1 lemon
1 tb Flour
3 tb Melted butter
1 c Flour
1/2 c Sugar
1 ts Baking powder
1/4 ts Salt
1 tb Melted butter
1/2 c Milk

INSTRUCTIONS

SPRINKLE THIS WITH
IN THIS ORDER
POUR OVER SURFACE
BATTER
Preheat oven to 425 degrees Prepare the following batter:
thoroughly grease 8" casserole dish Beat the batter and pour it over
rhubarb in pan. Cover. Bake 30 minutes. Reverse onto plate.
