Kale with Cinnamon

INGREDIENTS

1 md Onion; minced
1 ts Vegetable oil; (orig was 1 tbsp)
1 Clove garlic; minced
1/8 ts Ground cinnamon
1 lb Kale; finely chopped
1 c Vegetable stock
1 ts Red wine vinegar
Salt and pepper
Chopped fresh chives

INSTRUCTIONS

Saute the onion in the oil for 5 minutes. Add the garlic and cook for 2
more minutes. Stir in the cinnamon, and add the kale, tossing it to coat
with the mixture. add the vegetable stock. Cover and simmer for 15 minutes.
Season with vinegar, salt and pepper, and chopped fresh chives.
Per serving: 124 Calories; 3g Fat (20% calories from fat); 6g Protein; 22g
