Kathy’s Sweet Potatoes

INGREDIENTS

3 c Mashed sweet potatoes; fresh or canned
1/2 c Sugar
2 tb Melted margarine
1/3 c Skim milk
1/4 c Plus 2 T buttermilk
1 Egg + 2 egg whites; well beaten
1 ts Vanilla
1/4 ts Salt
1/3 c Firmly packed brown sugar
1/4 c Flour
1 1/2 tb Buttermilk
1 tb Melted margarine
1/3 c Chopped pecans

INSTRUCTIONS

TOPPING
Combine sweet potatoes, sugar, 2 T melted margarine, skim milk, 1/4 c + 2 T
buttermilk, egg, egg whites, vanilla and salt. Mix well and pour into an
8-inch square baking dish that has been sprayed with Pam. In a small bowl,
combine topping ingredients; sprinkle evenly over potato mixture. Bake at
350F for 25-45 minutes or until set and top is browned.
