Kim’s Favorite Gratin Potatoes

INGREDIENTS

2/3 c Masa harina
2 tb Light miso
2 1/2 c Warm vegetable stock or water
1 ts Black pepper or to taste
1 tb Paprika
2 1/2 lb Red or Yukon Gold potatoes; (to 3 lbs)
Cut in 1/4" slices & peeled if desired
Cooking spray

INSTRUCTIONS

Preheat oven to 375 F and lightly spray a 9 x 13-inch baking dish. In a
large bowl, whisk together masa, miso, vegetable stock, pepper, and
paprika. Toss potato slices in masa mixture and arrange in baking dish.
Pour remaining sauce from bowl over slices. Bake for 30 to 40 minutes until
potatoes are tender and sauce is lightly browned and creamy.
