INGREDIENTS

4 Kiwi fruit
1/4 c Lime juice
3/4 c Unsweetened pineapple juice
3 c Sugar
1 3-ounce pouch liquid fruit pectin

INSTRUCTIONS

Wash 3 1/2 pint jars in hot soapy water;rinse. Keep hot until needed.
Prepare lids. Wash kiwis; peel. Slice about 1/8" thick; set aside. In a 4
quart pot, combine lime juice, pinapple juice and sugar. Bring to a boil
over med-high heat, stirring until sugar dissolves. Add kiwi slices. Reurn
mixture to a boil. Stirring constantly, boil 1 minute. Remove from the
heat; stir in pectin. Ladle hot preserves into 1 hot jar at a time, leaving
1/4" headspace. Wipe rim with a clean damp cloth. Attach lid. Place in
canner. Fill and close remaining jars. Process in water bath . (1/2 pints =
10    minutes )
