INGREDIENTS

1/4 c Ground beef
2 tb Tomato paste
1 tb Vegetable oil
3 c Water
2/3 c Long grain rice
1 Potato; diced
Additional water
1/2 c Parsley; cut up
Salt to taste

INSTRUCTIONS

POTATO RICE SOUP
Using a 2 quart saucepan, brown the ground beef. Add the oil and tomato
paste and cook a few more minutes. Add the water and bring to a boil. Stir
in the rice and cook over medium heat 15 minutes. Add the potato and
continue cooking until potato and rice are tender. Add more water to nearly
fill the pan, and bring to a boil again. Add salt to taste. Turn off heat
and stir in parsley.
