INGREDIENTS

16 Phyllo leaves
1/2 lb (2 sticks) butter; melted
2 c Mashed potatoes with scallions; (**recipe follows)

INSTRUCTIONS

And one more from the cook book "A Passion for Potatoes" by Lydie Marshall.
Each phyllo leaf will yield two 2- by 3-inch knishes. Lightly brush 1
phyllo leaf with melted butter and fold it in quarters, lightly brushing
with butter after each fold. Fold again in quarters, brushing with butter
after you fold. (You will need about 1 tablespoon melted butter for each
leaf.) Cut the folded leaf in half, mound 1 tablespoon mashed potatoes near
one end, butter the edges, and fold the other end over the filling,
pinching the edges to seal. Preheat the oven to 350 degrees. bake for 20
minutes, turning once. Serve warm with drinks.
** Mash 2 cups of potatoes, mix with about 1 cup of thinly sliced
scallions, add salt and pepper. Set aside to cool.
*** Roll out 1 phyllo sheet at a time, using a damp towel to cover the
others to prevent them from drying out. Work fast, a phyllo leaf dries out
quickly and cracks easily.
