INGREDIENTS

2 Medium-sized slices of crustless stale; soaked briefly in
; bread, water
500 g Lean minced lamb or beef; (1lb)
1 Medium-sized onion; finely chopped
2 tb Freshly chopped mint or 1 teaspoon dried
; mint
1 tb Freshly chopped parsley
1 Clove garlic; crushed
1 Egg
Salt and freshly ground black pepper
Plain flour; for dusting
Vegetable oil; for shallow or deep
; frying

INSTRUCTIONS

GENERAL
FOR FRYING
Squeeze out excess water from the bread, leaving it quite dry.
Combine all the ingredients for the kofte and mix well.
Make walnut-shaped balls and keep them covered until they are to be cooked.
Then roll them lightly in flour and fry in hot oil for 2-3 minutes until
golden all over.
