INGREDIENTS

2 lb Squash, small
1 T Butter
3 T Onion, chopped
1 c Kefalotiri cheese, grated OR
1 c Parmesan cheese, grated
1 c Bread crumbs, toasted
1 T Parsley, chopped
2 Eggs
Salt & pepper to taste
Flour
Oil for frying

INSTRUCTIONS

Clean and wash the squash.  Boil in lightly salted water until soft;
drain well.  Mash and set aside. Melt the butter in a pan, and saute
the onions until limp and golden but not browned. Add onion, cheese
bread crumbs, parsley, eggs, and salt & pepper to the squash, and mix
well. If mixture is too soft, add more bread crumbs. Let it stand for
10 min., then shape in croquettes or patties.  Roll in flour, fry
