Kumquat, Seville Orange, And Apricot Marmalade

INGREDIENTS

1 c Ma Made prepared Seville oranges; * thin- or thick-cut
1 c Thinly sliced kumquats; (about 5 ounces)
1 c Thinly sliced dried apricots; (about 1/4 pound)
2 1/4 c Sugar
1/2 c Water

INSTRUCTIONS

*available at some specialty foods shops
In a saucepan bring all ingredients to a boil, stirring, and simmer,
stirring occasionally, 15 minutes, or until slightly thickened. Let
marmalade cool in a heat-proof bowl and chill, covered, until cold, about 2
hours. Marmalade keeps, covered and chilled, 2 weeks.
Makes about 3 cups.
