Latticed Tuna

INGREDIENTS

60 g Butter or margarine
4 tb Plain flour
3 c Milk
1/4 ts Salt
1/4 ts Pepper
1 pn Crushed garlic
1 1/4 ts Curry powder
1 sm Onion, finely sliced
310 g Can corn kernels
1 Tomato
1/2 c Frozen peas
1/2 Lemon (juice of)
1 lg Can tuna in brine drained
6 sl Bread, crusts removed
Butter, to spread bread
Grated tasty cheese
Paprika

INSTRUCTIONS

Melt butter in a large saucepan, add flour and cook for about a
minute. Gradually add the milk, stirring constantly so no lumps form.
Add seasoning, garlic curry powder and vegetables and lemon juice
over tuna. Then add tuna to mixture.
Place mixture in a casserole dish and cut the crusts of bread off the
bread and butter slices well. Cut into fingers.
Lattice the bread on top of the casserole and sprinkle well with
cheese and paprika. Place under a preheated griller or a moderate
oven 180c until cheese melts.
This can be made ahead and kept in the fridge.
