Leftover Cooked Rice – Berry Rice Layer Dessert

INGREDIENTS

300 g Cooked white rice; (any type)
350 g Ripe berries; prepared
4 tb Vanilla sugar
2 tb Berry conserve
1 oz Zest; shredded, juice
; squeezed
450 g Creme fraiche; (or fromage frais)
Extra fruits or mint to decorate

INSTRUCTIONS

Whizz the rice, half of the berries, and all of the sugar along with the
fruit conserve briefly in a food processor to a rosy puree. Layer this in 4
serving glass dishes or bowls.
Add a layer of remaining fruit, the juice then the dairy product of your
choice. Add the zest.
Decorate with extra fruits or mint and serve cool.
