Lemon Blueberry Bread

INGREDIENTS

1/3 c Butter or margarine; melted
1 c Sugar
3 tb Lemon juice
2 Eggs
1 1/2 c Flour
1 ts Baking powder
1/2 ts Salt
1/2 c Milk
2 tb Grated lemon peel
1/2 c Nuts; chopped
1 c Blueberries; fresh or frozen
2 tb Lemon juice
1/4 c Sugar

INSTRUCTIONS

GLAZE
In a mixing bowl, beat butter, sugar, juice and eggs. Combine flour, baking
powder and salt; stir into egg mixture alternately with milk. Fold in peel,
nuts and blueberries. Pour into a greased 8 x 4 x 2 loaf pan. Bake at 350
for 60 to 70 minutes or until bread tests done. Cool in pan for 10 minutes.
Meanwhile, combine glaze ingredients. Remove bread from pan and drizzle
with glaze. Cool on a wire rack. Source: Taste of Home; Feb./March 1995.
