Lemon Chile Cordial (In the Australian Sense!)

INGREDIENTS

1 1/4 c Fresh lemon juice
1/2 tb Red pepper or chile flakes (up to 1)
1 1/2 c Sugar
1 c Water

INSTRUCTIONS

A couple of months ago I posted a request for a recipe for lemon chile
cordial. Luke kindly responded to people who asked what in the world it
was. (A sort of drink syrup that you store in the fridge and mix with water
when you want to a drink. Kind of like a liquid Kool Aid concentrate.)
Elsa, on this list, gave me some suggestions and I FINALLY had a bit of a
play. This sort of goes along with the chile lemonade thread a few days ago
(which I'm still reading because I've been so busy).
Here are my notes:
I made a simple syrup by heating the water and sugar until the sugar had
dissolved. I then thickened it a bit by boiling for awhile, maybe 5
minutes, max. As it was boiling, I added the chile flakes to get some of
the oils out. Put that mixture and the lemon juice into a bottle with a
swing top and shook it all up. Let it sit in the fridge overnight. To mix a
drink, I put ice in a glass added one part syrup to 2 parts water, or so.

This tastes pretty close to the commercial stuff that I bought, but now I
can make mine own with the lemons off my tree and my own chile flakes!
