Lemon Herbed Potatoes

INGREDIENTS

6 Baking potatoes
2 T Unsalted margarine
1 t Dill
1/8 t White pepper
1 T Parsley
1/2 c Chopped onion
1/2 c Hot skimmed milk
1 Garlic, minced
1 t Grated lemon peel
Paprika to taste

INSTRUCTIONS

Bake the potatoes in a hot oven until done. Remove and cool. Saute the
onion and garlic in unsalted margarine. Scoop out the potatoes and
mash the pulp. Beat in the sauteed onion/garlic mixture, hot skimmed
milk, lemon and pepper. Mix in dill and parsley. Refill skins and
sprinkle with paprika. Rebake at 400F for 30 min.  Source: The demented
